Out of all the meals, I’d have to say that breakfast is my favorite.
I know that may surprise, and potentially even anger, some of you out there. But, try as I might, I can’t really think of any downsides to a solid breakfast, even when stacked up against the effectiveness (and deliciousness) of a post-noon dish, or evening meal.
I’m sorry, but that’s just how I feel.
And, when I try to ask myself why this is the case, I feel like it has a lot (if not everything) to do with my insatiable sweet tooth.

While it probably goes without saying, the majority of these early morning feasts are reminiscent of a fully-stocked dessert cart.
Syrups and powdered sugars as far as the hunger eye can see. It’s all such a delight. There’s nothing better than starting the day off with a lip-smacking, sugar-laden breakfast. In fact, I’d argue that the closer these things taste to a dessert - the better they are.

Now, I’m sure you’ve noticed that first ingredient: cannabis-infused coconut oil.
I’m well aware that this isn’t exactly a common“kitchen staple” (yet), but have no fear, plenty of dispensaries have more than a few of these cannabis culinary aids for sale. So, if you’d like, you can head on down to your neighborhood cannabis club, and pick up a bottle of this stuff for a respectable price.
However, if they happen to be sold-out, or not carry that particular product, no worries - you can just as easily make a batch of it at home by yourself.
I understand that may seem daunting to some, but I assure you, the entire process couldn’t be simpler. And, lucky for you, I’ve already written a recipe on just how to make such an oil.

So, if you are feeling adventurous, or simply forced to attempt this endeavor out of sheer lack of professionally made cannabis-infused coconut oil for sale in your area, then you can follow my quick recipe on how to make an amazing batch of your very own.
However you choose to go about your infused coconut oil mission is completely up to you. Store-bought or homemade, there really isn’t much of a difference. But, regardless of what oil-inspired route you choose, this ingredient is critical to the recipe, and it cannot be skipped. So, be sure to get your hands on some, one way or another, before diving head first into this particular recipe.

Ingredients

Here’s a short list of all the ingredients needed in order to properly pull off this amazing recipe:

  • ½ Cup of Cannabis-Infused Coconut Oil
  • 3 Large Overripe Bananas
  • ½ Cup of Dark Chocolate Chips Mini
  • 3 Eggs
  • ½ Teaspoon of Sea Salt
  • ¼ Cup of Sugar
  • ¼ Teaspoon of Xanthan Gum
  • ½ Teaspoon of Vanilla Extract
  • ½ Teaspoon of Baking Soda
  • 1 Cup of Almond Flour
  • ¼ Cup of Coconut Flour

Instructions

  • For starters, you’ll want to preheat that oven of yours to a traditional 350°.
  • As that bad boy slowly climbs up to that desired temperature, you can grab your muffin tin, and start to place liners into each individual cup.
  • Once you’ve completed that ultra-easy step, you can grab your bananas, and toss them into a bowl. Mash those suckers up as best you can, then beat in those eggs, along with the vanilla, and sugar.
  • Then, using a muffin (or ice cream) scoop, distribute little balls of this banana batter into each lined muffin inlet. At this point, you can sprinkle those remaining chips on top.
  • But, after that, you’ll want to toss the muffins into your preheated oven for somewhere between 15-20 minutes.
  • You’ll know these babies are down when they start to sport a healthy golden brown complexion. And, if it passes the fateful “toothpick test,” you can remove them from the oven, and set them to the side to cool.
  • And that’s it, my fellow enthusiasts. That’s how you make Cannabis-Infused Chocolate Banana Muffins from scratch.

And whatever muffins you don’t eat, simply place them in an airtight container, and store them in the fridge for safekeeping.
Under those conditions, they should be able to last for about 5 days or so. Which, when you break it down, means you can have these as part of your fully balanced (fully infused) breakfast every day of the work week.
